All of our 2.1 oz. artisan bars are made in small batches in 50 qt. stainless steel "melangers." These are custom-made revolving stock pots that have been fitted with a  bottom lining of 3/4 in. countertop granite. Custom fabricated granite wheels ride on a stainless steel T-structure inside the pot and roll over and over the organic cocoa nibs, organic cocoa butter, organic sugar and other ingredients for 72 hours. The mixture slowly liquifies, and the sugar and flavors become deeply infused into the molten chocolate. The revolving mix generates heat as it grinds, but it is wired to an intermittent timer so that it cools off regularly, and the chocolate is processed at a relatively low temperature. This best preserves the enzymes within the "superfood" cacao beans.
