All of our 2.1 oz. artisan bars are made in small batches in 50 qt. stainless steel "melangers." These are custom-made revolving stock pots that have been fitted with a  bottom lining of 3/4 in. countertop granite. Custom fabricated granite wheels ride on a stainless steel T-structure inside the pot and roll over and over the organic cocoa nibs, organic cocoa butter, organic sugar and other ingredients for 72 hours. The mixture slowly liquifies, and the sugar and flavors become deeply infused into the molten chocolate. The revolving mix generates a lot of heat as it grinds, but is wired to an intermittent timer so that it cools off every 5 minutes, and the chocolate never exceeds 115 degrees Fahrenheit. This best preserves the enzymes within the "superfood" cacao beans.
